WACO, TX — Po' Boy Place has only been open for two weeks, always planning to open around this time, they didn't expect to do it in the middle of a pandemic.
Owner, Leo Spann, is looking on a positive note as they were able to open once restaurants could start allowing dine-in once again.
"25% open was a really good time for us, the Waco community has definitely embraced us and really shown lost of love making sure they support local," Spann said.
Of course Po' Boy Place didn't get as grand of an opening as they hoped, needing to scale back on a few things. They are thankful, however, for the quick support from the community.
Spann grew up with him and his mom in the kitchen making some of the best Cajun and creole inspired foods. He wanted to bring the love he has for great gumbo and perfect po' boys to Central Texas.
"It's just bringing what I grew up on to the Waco community," Spann said.
They only cook with the best, local, ingredients. Po' Boy place even sources product from Louisiana, making sure it's authentic as can be.
"We marinate and fabricate all our meats in house, scratch-made sauces daily and our own spice blend of course," Spann said.
It may not have been Spann's perfect plan when opening Po' Boy Place but he's taking all the help, love and support that he can. As we look toward the future, Spann has some big goals in mind for his restaurant.
"If you have a solid plan and you have passion and you believe in what you're doing it'll work out," Spann said.
Po' Boy Place is open Sunday-Thursday 11 a.m. to 8 p.m. and Friday-Saturday 11 a.m. to 9 p.m.
