COLLEGE STATION, TX — Costa Vida Fresh Mexican Grill delayed its opening for weeks because of the COVID-19 pandemic. Now, they're officially open and couldn't be more excited.

Franchise owner, Holly Johnston, went to Texas A&M University. Considering College Station her home, she knew owning a restaurant would be a great idea and service to the community.

After much anticipation, she's happy to finally be open despite the laundry list of protocols they're abiding by.

"We do take a temperature of all of our employees we have a temperature log, we have an in-store protocol that we use," Johnston said.

It's a small weight off her shoulders, and Johnston is happy to finally welcome the community into the new restaurant.

"It was definitely a little bit of a relief just to know that we got to the point where we can open our doors," Johnston said.

With a new restaurant, comes new job opportunities. Employee Landon Downs is happy to have found a job when so many are in need.

"Looking for a job was kinda difficult and so when I heard it was opening and I heard a few of my friends were going to work here it was a huge blessing," Downs said.

He realizes the importance of the food industry after working hands-on at Costa Vida.

"Being able to provide them [customers] food, and to take care and service that we can provide is wonderful and I'm very grateful for the opportunity," Downs said.

You're sure to taste the freshness at this fast-casual restaurant, even making their tortilla's from scratch they're welcoming everyone near and far.

"It's great for business meetings, it's great for families and we want everyone to know they have a place here at the table," Johnston said.

Costa Vida opens 11 a.m. to 9 p.m. Monday through Thursday, until 10 p.m. Friday and Saturday and they close at 3 p.m. Sunday.
