BRYAN, Texas — Earlier this week, Texas Meat Market caught fire and now they are up and running their food truck.

Despite the fire that is said to have originated from the kitchen area, Texas Meat Market started selling breakfast, lunch and dinner until supplies last.

Laura Mendez says when she got the call about the meat market being on fire, she hadn’t seen the damage until later that evening.

The food truck was damaged in the fire, but still usable.

“I didn’t see the building until later on that day and then later on we sat with my family, and we tried to figure out a plan to get this going as fast as possible,” said Laura Mendez, Texas Meat Market. “We were like, ‘hey you cannot just sit and be depressed and cry about this. You have to continue, fight for it, and keep going.’”

And while operating out of the food truck was not the original plan, the Mendez family wanted to find a way to still be there for their supportive customers.
